Well I had a good streak of good recipes going, this recipe sadly ends that streak. The recipe comes from the book Barbecue by Clare Ferguson.
I had some pretty high hopes when I started this recipe. It’s a Thai and Vietnamese inspired salad which sounded delish. It just didn’t deliver.
To start off with I boiled a pot of water and removed from heat. I set a colander with rice noodles into the pot and them soak until they were soft. Then I removed the colander from the hot water and rinsed the noodles under cold water for a few minutes. I drained and placed the noodles in a large bowl.
I added sliced mango, thinly sliced red chiles, coarsely chopped mint and cilantro, and minced ginger to the bowl.
In a small bowl I mixed peanut oil, minced garlic, thinly sliced green onions, sugar, sesame oil, fish sauce, sesame seeds and rice vinegar.
I mixed the dressing with the contents of the large bowl and served.
Verdict: Fail! The noodles and dressing didn’t mix/stick well together. I also think there was a bit too much cilantro and mint – even though I actually used less than the recipe called for. Last time I used this cookbook I wasn’t thrilled by the results either, you can read about it here, so I am starting to feel like this cookbook might be a dud.
